Alcohol-free wine is no longer a curiosity. It appears on restaurant menus, on wine shop shelves, and even in discussions among wine lovers. But behind this rapidly growing phenomenon, many questions remain: how is it made?

What exactly is alcohol-free wine?

First and foremost, an alcohol-free wine is still a wine.
The grapes are harvested, pressed, fermented, and aged—just like any traditional wine. Only then is the alcohol removed. This step does not turn the wine into grape juice; it simply removes one component while preserving its structure, aromas, and freshness.

That’s what makes all the difference: alcohol-free wine retains its identity, natural acidity, varietal nuances, and that little something that makes it similar to the wine experience… but without the effects of alcohol.

How do you remove alcohol from wine?

There are several techniques, but they are not all equal.
For our part, we have chosen vacuum distillation at 35°C, a gentle method that respects the wine.

Under vacuum, the temperature required to evaporate alcohol drops considerably. At 35°C, alcohol can be extracted without “cooking” the wine or damaging its aromas. It’s a bit like blowing very gently on embers rather than using a blowtorch: the result is finer, more delicate, and more faithful to the original material.

The natural aromas captured during dealcoholization are then reintroduced into the wine. Nothing artificial, nothing added: simply what the wine already contained.

Our alcohol-free wine is therefore:
organic, 0% alcohol, no added sugar, no added flavors, made from Souvignier Gris (a resistant grape variety) and stabilized by pasteurization.

Why is non-alcoholic wine so popular today?

Non-alcoholic wine is part of a fundamental shift: the desire to drink differently, more consciously, without sacrificing pleasure! Many people want to reduce their consumption, others don’t drink at all, and some prefer an alternative for a business lunch, a sports event, or simply because they want to enjoy the taste without the effects of alcohol.

And unlike soda or very sweet juice, non-alcoholic wine offers a much more gourmet profile: nuance, freshness, and sometimes complexity. In short, something that truly complements a dish, a moment, or a meal.

Alcohol-free wine and resistant grape varieties

For us, producing alcohol-free wine from a resistant grape variety such as Souvignier Gris is a no-brainer.
These varieties require very little treatment, are better adapted to climatic variations, and allow for cleaner, more consistent viticulture that is more respectful of the soil.

When producing an alcohol-free wine (a beverage designed to be lighter, more accessible, and more universal), we felt it was important that it also be exemplary in the way it is cultivated.

Fewer inputs in the vineyards, less impact, more naturalness: this is the logical continuation of our vision.

In short: wine, but different

Alcohol-free wine is neither a gimmick nor a passing fad. It is a new way of drinking, more open and inclusive, allowing everyone to enjoy the taste of wine without the constraints. When produced with care, from a high-quality, organic base made from resistant grape varieties and de-alcoholized using a respectful method, it becomes a product in its own right: serious, delicious, and accessible.
