Antioxidant<\/strong><\/h4><p data-start=\"1155\" data-end=\"1215\">They prevent the wine from oxidizing (avoiding a &#8220;maderized&#8221; taste).<\/p><h4 data-section-id=\"jrvbut\" data-start=\"1217\" data-end=\"1239\"><strong>2. Antibacterial<\/strong><\/h4><p data-start=\"1240\" data-end=\"1306\">They protect the wine from undesirable bacteria and yeasts.<\/p><h4 data-section-id=\"1u7w6tz\" data-start=\"1308\" data-end=\"1330\"><strong>3. Stabilizer<\/strong><\/h4><p data-start=\"1331\" data-end=\"1385\">They ensure better preservation over time.<\/p><p data-start=\"1387\" data-end=\"1429\">Without sulfites, a wine can quickly :<\/p><ul data-start=\"1430\" data-end=\"1484\"><li data-section-id=\"1064dcd\" data-start=\"1430\" data-end=\"1441\">turn<\/li><li data-section-id=\"9ilwqt\" data-start=\"1442\" data-end=\"1462\">become unstable<\/li><li data-section-id=\"lzdlqd\" data-start=\"1463\" data-end=\"1484\">lose its aromas<\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-c8a7467 e-flex e-con-boxed e-con e-parent\" data-id=\"c8a7467\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t<div class=\"elementor-element elementor-element-b8c3966 elementor-widget elementor-widget-heading\" data-id=\"b8c3966\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Are sulfites hazardous to health?<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-c1ea05a elementor-widget elementor-widget-text-editor\" data-id=\"c1ea05a\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p data-start=\"1573\" data-end=\"1684\">In the doses used in wine, sulfites are <strong data-start=\"1629\" data-end=\"1654\">considered safe<\/strong> by the health authorities.<\/p><p data-start=\"1686\" data-end=\"1713\">By way of comparison :<\/p><ul data-start=\"1714\" data-end=\"1864\"><li data-section-id=\"cdlnx7\" data-start=\"1714\" data-end=\"1785\">dried fruit often contains <strong data-start=\"1752\" data-end=\"1772\">more sulfites<\/strong> than wine<\/li><li data-section-id=\"1xpco4e\" data-start=\"1786\" data-end=\"1864\">some people unknowingly consume sulfites on a daily basis<\/li><\/ul><div><h4 data-section-id=\"1bcnoil\" data-start=\"1871\" data-end=\"1897\"> <\/h4><h4 data-section-id=\"1bcnoil\" data-start=\"1871\" data-end=\"1897\"><strong>Les cas de sensibilit\u00e9<\/strong><\/h4><p data-start=\"1899\" data-end=\"1976\">Approximately <strong data-start=\"1907\" data-end=\"1931\">1% of the population<\/strong> may be sensitive to sulfites:<\/p><ul data-start=\"1978\" data-end=\"2030\"><li data-section-id=\"dq0xpk\" data-start=\"1978\" data-end=\"2004\">asthmatics<\/li><li data-section-id=\"1wj3fzj\" data-start=\"2005\" data-end=\"2030\">allergy sufferers<\/li><\/ul><p data-start=\"2032\" data-end=\"2056\">Possible symptoms:<\/p><ul data-start=\"2057\" data-end=\"2118\"><li data-section-id=\"5pm51j\" data-start=\"2057\" data-end=\"2073\">headaches<\/li><li data-section-id=\"ccmezp\" data-start=\"2074\" data-end=\"2095\">respiratory discomfort<\/li><li data-section-id=\"ikf72k\" data-start=\"2096\" data-end=\"2118\">skin reactions<\/li><\/ul><p data-start=\"2120\" data-end=\"2136\">But be careful:<\/p><p data-start=\"2138\" data-end=\"2212\">In most cases, wine-related headaches are due to :<\/p><ul data-start=\"2213\" data-end=\"2287\"><li data-section-id=\"18x6y67\" data-start=\"2213\" data-end=\"2227\">to alcohol<\/li><li data-section-id=\"oden10\" data-start=\"2228\" data-end=\"2251\">dehydration<\/li><\/ul><\/div>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-39645a9 elementor-widget elementor-widget-heading\" data-id=\"39645a9\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\"><h2 data-section-id=\"15ah032\" data-start=\"1812\" data-end=\"1862\">Why do sulfites have a bad reputation?<\/h2><\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-25ac06f elementor-widget elementor-widget-text-editor\" data-id=\"25ac06f\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p data-start=\"251\" data-end=\"407\">Although sulfites have been used in winemaking for centuries, they have become a source of distrust for many consumers. But this bad reputation is often based more on <strong>perception<\/strong> than <strong>fact<\/strong>. <\/p><h5 data-section-id=\"1dqdein\" data-start=\"505\" data-end=\"554\"><strong>Confusion between &#8220;chemical&#8221; and &#8220;dangerous<\/strong><\/h5><p data-start=\"556\" data-end=\"661\">The word &#8220;sulfites&#8221; can be frightening. It evokes something chemical, industrial, even artificial. But this is a misleading shortcut.  <\/p><p data-start=\"703\" data-end=\"859\">Sulfites are <strong data-start=\"724\" data-end=\"781\">naturally produced during wine fermentation<\/strong>. Even a wine with no added sulfites still contains a small amount. <\/p><p data-start=\"861\" data-end=\"982\">This confusion feeds the idea that all sulfites are &#8220;added&#8221; and therefore potentially harmful, which is false.<\/p><h5 data-section-id=\"1ybnvgs\" data-start=\"2135\" data-end=\"2177\"><strong>Headaches often misattributed<\/strong><\/h5><p data-start=\"2179\" data-end=\"2268\">Sulphites are regularly blamed for wine-related headaches. But in most cases, <strong>sulfites are not the culprit<\/strong>. <\/p><p data-start=\"2334\" data-end=\"2374\">The most frequent causes are :<\/p><ul data-start=\"2375\" data-end=\"2456\"><li data-section-id=\"m8zgb1\" data-start=\"2375\" data-end=\"2396\">alcohol itself<\/li><li data-section-id=\"w0yixg\" data-start=\"2397\" data-end=\"2418\">dehydration<\/li><li data-section-id=\"5kkc9s\" data-start=\"2419\" data-end=\"2456\">histamines or other compounds<\/li><\/ul><p data-start=\"2458\" data-end=\"2541\">True sulfite sensitivities do exist, but they remain in the minority.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-bdfad9e elementor-widget elementor-widget-heading\" data-id=\"bdfad9e\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\"><h2 data-section-id=\"7hcccc\" data-start=\"2374\" data-end=\"2418\">Should sulfites be avoided in wine?<\/h2><\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-a85cd65 elementor-widget elementor-widget-text-editor\" data-id=\"a85cd65\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<h5 data-section-id=\"1dlf5c7\" data-start=\"2420\" data-end=\"2469\"><strong>Short answer: no, except in special cases<\/strong><\/h5><p data-start=\"2471\" data-end=\"2546\">For most consumers, sulfites pose no problem.<\/p><h5 data-section-id=\"1b5728v\" data-start=\"2553\" data-end=\"2585\"><strong>Another approach exists<\/strong><\/h5><p data-start=\"2587\" data-end=\"2670\">Rather than trying to avoid them altogether, some winemakers choose <strong data-start=\"2675\" data-end=\"2704\">not to add them at all<\/strong>, by working differently right from the vine.<\/p><p data-start=\"2749\" data-end=\"2795\">This is particularly the case at Pierre &amp; Antonin, where <strong data-start=\"2800\" data-end=\"2844\">all wines are free of added sulfites<\/strong>, with an approach based on :<\/p><ul data-start=\"2876\" data-end=\"2999\"><li data-section-id=\"o0pdiq\" data-start=\"2876\" data-end=\"2938\">healthy grapes (thanks in particular to resistant varieties)<\/li><li data-section-id=\"15fh43n\" data-start=\"2939\" data-end=\"2969\">natural winemaking<\/li><li data-section-id=\"jjfldp\" data-start=\"2970\" data-end=\"2999\">minimum intervention<\/li><\/ul><p data-start=\"3001\" data-end=\"3121\">The aim is not to be &#8220;sulfite-free&#8221; at all costs, but to <strong data-start=\"3068\" data-end=\"3120\">produce wines that are lively, coherent and easy to digest<\/strong>.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-fca7592 elementor-widget elementor-widget-heading\" data-id=\"fca7592\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\"><h2 data-section-id=\"124bw4s\" data-start=\"3128\" data-end=\"3178\">Sulfite-free wine: what impact on taste?<\/h2><\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-fdaebbe elementor-widget elementor-widget-text-editor\" data-id=\"fdaebbe\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p data-start=\"3180\" data-end=\"3227\">Wines with no added sulphites can offer :<\/p><ul data-start=\"3229\" data-end=\"3310\"><li data-section-id=\"g47x8h\" data-start=\"3229\" data-end=\"3250\">more freshness<\/li><li data-section-id=\"h5gssv\" data-start=\"3251\" data-end=\"3268\">more fruit<\/li><li data-section-id=\"ek2fex\" data-start=\"3269\" data-end=\"3310\">a more direct expression of the grape<\/li><\/ul><p> <\/p><p data-start=\"3312\" data-end=\"3332\">But also sometimes :<\/p><ul data-start=\"3334\" data-end=\"3407\"><li data-section-id=\"1sslana\" data-start=\"3334\" data-end=\"3381\">more variation from bottle to bottle<\/li><li data-section-id=\"ldpamo\" data-start=\"3382\" data-end=\"3407\">a more &#8220;alive&#8221; side<\/li><\/ul><p data-start=\"3409\" data-end=\"3474\">It&#8217;s a different experience, not better or worse.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-22364d3 elementor-widget elementor-widget-heading\" data-id=\"22364d3\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">To remember<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-b7c3ab3 elementor-widget elementor-widget-text-editor\" data-id=\"b7c3ab3\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p data-start=\"1506\" data-end=\"1649\">In the end, the question may not be &#8220;should sulfites be avoided?&#8221;, but rather: <strong data-start=\"1598\" data-end=\"1649\">how do you produce a wine that doesn&#8217;t need them?<\/strong><\/p><p data-start=\"1656\" data-end=\"1723\">This is the question that guides our work at Pierre &amp;
